The Best Salad Ever: Apple, Cheese and Chive Salad

I had this salad in Naples at Cafe Lurcat last week and cannot stop thinking about it.  I am going to attempt this week.  It was so delicious!!!

The cool thing was the apples and cheese were slivers of the same size so you could not really tell what you were getting.  

A friend that I dined with already purchased a mandolin for my slivers. Cannot wait to try it myself.

 I found the recipe online by a couple that was also in love with the salad. Here you go…Enjoy!
Apple, Manchego, and Chive Salad
 


 


Inspired by Cafe Lurcat
Makes: 4 to 6


What You Need
  • 4 firm, tart apples (we used Jonathon; honey crisp or even Granny Smith could work as well)
  • A bit of lemon juice
  • 4 ounces Manchego cheese
  • 8 chives (enough for 4 tablespoons chopped)
  • 1 tablespoon olive oil
  • 2 pinches kosher salt


What To Do
  1. Cut the apples into matchsticks (I would use a mandolin). Toss with a bit of lemon juice. Cut the cheese into matchsticks (I would use a mandolin). Thinly slice the chives.
  2. Toss all ingredients with 1 tablespoon olive oil and 2 pinches kosher salt. Serve immediately.
